Apart from shops in Seville, Washington, Sidney and Sao Paulo, the famous cake shop O Melhor Bolo de Chocolate do Mundo in Lisbon has a branch in the Salamanca district, where customers can enjoy cakes made with French Valrhona chocolate, butter, margarine, sugar, powdered cacao and egg. No flour or fermented cacao is used.
The result is a cake which is smooth and crispy. Based on mousse and suspiro cream, it is available in two versions, one with 70% cacao and the other with 53%. It became popular in Lisbon in the late 1980s at the restaurant owned by Carlos Braz Lopes, who created a dessert that was so successful that a special shop selling it was opened and it came to be sold in other cities abroad.
