Colombian chef Edwin Rodríguez heads up the first restaurant serving Colombian signature cuisine in Madrid, first awarded a Michelin star in the 2022 edition of the prestigious tourist guide. From Chamberí, Rodríguez presents a proposal inspired by Colombian flavours, under the contemporary, creative and personal interpretation of the chef.
Quimbaya’s kitchen is its soul, which is why it is open and the work of the chef and his team can be seen from the dining room. The restaurant has only 8 tables.
Quimbaya proposes an Idiosyncrasy Tasting Menu, which will take you on a gastronomic tour of Colombia, from the Caribbean to the Amazon, by way of the Pacific, the Andes and the Orinoquia, through stories created by the chef and reflected in his dishes. It also serves a wide variety of house cocktails, as well as an interesting selection of rums, spirits, and Colombian gins, and, of course, 100% Colombian coffee and fruit infusions. A different menu of light bites and snacks is served at the bar, which you also need to book.
One of the highlights of Edwin Rodríguez’s professional career includes having teamed up with the chef, Pepe Rodríguez, for almost a decade at El Bohío restaurant (1 Michelin Star). Since 2013, Rodríguez has represented Colombian cuisine at various private and public events organised by ProColombia and the Colombian Embassies in Seoul, Madrid and London, such as FITUR, MADRID FUSIÓN, ARCO, WTM, PACIFIC ALLIANCE SUMMIT, among others.
