With over thirty years experience in the sector, restaurateur Jesús Santos indulges his love of traditional Basque cuisine here in Madrid, adding a modern touch with special emphasis on seasonal produce.
With space for 65 diners, the restaurant has an extensive menu including delicacies such as fried Guernica peppers and battered prawns. But the highlight, without doubt is the fish, and the bacalao (salted cod) is the star of the show. Other Basque delicacies include Bilbao style hake and txangurro (spider crab).
