El Chaflán

Juan Pablo de Felipe is a chef and owner of El Chaflán, a restaurant where he displays his savoir-faire both in terms of the dishes he prepares and in the way he treats members of the public. Creations such as artichokes with potato and orange are an example of the evocative cuisine he prepares, influenced by the culinary deconstruction of Ferran Adrià.
The restaurant has a lounge area and a tapas section with high tables, as well as a large covered bar with wooden tree trunks where you can sample delicate morsels served on bread, such as Torta del Casar cheese, and eel with mascarpone. The menu offers specialities such as tartare of Bluefin tuna, fried white asparagus with warm mayonnaise, mushroom risotto and rice with lobster, available in small or large portions.
