The chefs David Arauz (a sushi chef, disciple of Kabuki’s Ricardo Sanz) and Roberto Limas prepare a modern Japanese fusion concept offering traditional sushi rolls as well as a wide selection of innovative Japanese dishes that are combined with other culinary influences but with the utmost respect for the produce of the highest quality and traditional Asian techniques.

99 Sushi Bar is yet another culinary offer from the NH Collection Madrid Eurobuilding Hotel. Located at the ground floor, it is a large, modern restaurant with an elegant design including a traditional sushi bar for 7 guests and a large glassed in terrace for 28 guests. The dining room can accommodate 47 people. 

Their menu, apart from the typical sushi and sashimi, includes inspired creations like cold salmon-and-toro-tuna nigiri, warm foie nigari, tiger-prawn tempura, black-cod with red-miso sauce and spicy-tuna maki with jalapeño sauce and crispy rice. Their menu wine list offers more than 300 choices to perfectly round up the meal.
