Chef, Javi Estévez (Michelin star for La Tasquería, his first great gastronomic adventure) runs his second restaurant in the Chamartín district of Madrid, which offers a traditional but more informal menu, which also includes offal, suitable for all and at affordable prices.
El Lince takes its name from the eatery that occupied the building until 2003, El Lince – Casa Avelino. Indeed, it maintains its old lettering and the lights that were on the façade. The restaurant has a bar at the entrance with high tables and stools and three lounges, where the tavern atmosphere can be perceived.
Estévez, along with the head chef, Adrián Collantes, has created a menu that includes traditional dishes, such as salad, croquettes, gildas, different cold meats or stews, which go hand in hand with its speciality, offal in a more classic style and suitable to all tastes. It serves portions and half portions but there is no tasting menu. Its drinks list, prepared by the bartender, Nagore Arregui, who is also head of the dining room, boasts a small selection of wines with classic designations, young and international references, as well as various cocktails, some of which have been created exclusively for El Lince.
