The Mexican chef, Roberto Ruiz, who won his first Michelin star for Mexican cuisine in Europe with the former Punto MX, is presenting his most personal project with this restaurant close to the Retiro, in which he offers a varied proposal in a setting that takes diners to the Mexican Pacific and its most unknown flavours. It is a new business concept that has been adapted to new times with a larger capacity and open every day of the week, with more affordable prices, incorporating a bar where Mexican tapas can be enjoyed.
For this project, Tatiana Allard is head chef, Maggie Bañuelos is head waiter and Inés Cabanas Casas is sommelier and head of the wine cellar. Together, they serve fresh and light cuisine, without complex preparation but with techniques typical of the coast, featuring fish and seafood as the main elements but not the only ones. The shorter menu offers the famous home-made corn tortillas, which are prepared each day.
As for the drinks list, there is a careful selection of wines, including sparkling, white and fortified wine, as well as a wide variety of tequilas and mezcals.
The establishment has been decorated by the Cousi interior design studio. With capacity for 100 diners, it is presided over by a large central bar in shades of blue that are reminiscent of sea water. It has two dining rooms separated by a corridor, in which natural elements in fine materials are combined with other more traditional ones, which add serene sophistication.
