The lobby of the luxurious and innovative boutique hotel The Pavillions Madrid houses this restaurant that offers Mediterranean haute cuisine with touches of Asian fusion, led by the executive chef Guillermo Salazar. Guillermina is open from breakfast until dinner.
The restaurant features pieces by the Álvaro Alcázar gallery and with a retractable roof that adapts to different weather conditions. Red armchairs and marble tables give the final decorative touch. The restaurant includes a reserved space.
The menu includes dishes that explore chef’s Mediterranean roots, but also his training in New York. Many of the dishes have international touches, but they always respect Spanish essence by using national seasonal ingredients.
