Run by Paco Quirós and Carlos Crespo, this restaurant brings the best dishes of Cantabrian cuisine to the palate of Madrid’s residents, together with innovative haute-cuisine by the chef, José de Dios.
With careful decoration by the designer, Sandra Tarruella, La Bien Aparecida (whose name refers to the patron saint of Santander) has capacity for 100 diners. The space is divided into two levels. The upper floor, housing two spacious lounges and a bar, is reached by a wooden staircase. The lower floor has a private room with a domed ceiling. In all of them, there is an air of simplicity and delicacy, which combines perfectly with the quality of the dishes served there.
The menu is not very varied but includes classic dishes, such as sautéed clams. It offers a sampling menus, which have its own pairings.
