This classic Madrid restaurant, which opened its doors half a century ago in the neighbourhood of Chamberí, offers an updated menu in which the youngest member of the family, chef Víctor Membibre, makes full use of the knowledge he acquired in Hilario Arbelaitz's Zuberoa in Oyarzun, Bittor Arginzoniz's Etxebarri in Axpe (Vizcaya) and L'Atelier de Joël Robuchon in París.
Membibre presents a menu featuring traditional dishes made using updated techniques, as well as a tasting menu consisting of eight dishes that vary depending on the season, a dessert and some delicate petits fours, all of which are made with top-quality ingredients. Its wine list is varied, offering everything from inexpensive options to wines like Castillo Ygay 1986 by the Marqués de Murrieta winery.
In the area near the establishment’s entrance customers can enjoy nibbles and snacks designed for sharing.
