This restaurant, run by Íñigo Urrechu and Hipólito Vázquez and located in Alcobendas in the residential area of La Moraleja, has become a shrine to the best grilled meats.
Iñigo, on the grill, stands out for his beef chops from the mountains of Leon and Galician and Asturian beef with an average age of twelve years, matured for around 40 days. Santamaría opts for traditional dishes, such as foie-gras terrine with pistachios, Almadraba tuna sashimi in toasted garlic or grilled octopus with potato mousseline and paprika oil.
