Two big names in Spanish gastronomy, José de La Cruz, former maître d' at the Almirez, and chef Paco Pereira, have come together to set up this gastronomic space in a two-storey house in the district of Chamartín.
The food has clear Galician roots, as does Paco himself, but with influences from Navarre that hark back to the family of José de la Cruz, along with an international vocation that comes from both of them. The menu also includes various light bites focusing on market cuisine, such as anemones with Padrón peppers, and tempura prawns. It also offers a wide variety of rice dishes (fishermen's rice, black rice with squid and prawns, or vegetable and red prawn rice) and other specialities such as crab salad, asparagus from Navarre, Galician oysters, herring with its own roe, mango and guacamole, and scallops with a 'veil' of Iberian pork.
