Located in the Salamanca neighbourhood, this is the second restaurant by the chef from Lima, Mario Céspedes, who trained in prestigious kitchens, such as Celler de Can Roca, Ramón Freixa or Kabuki. After opening his own restaurant in Avilés (Asturias), this establishment serves modern fusion cuisine adapted to the product and tastes of the local public.
Céspedes’ cuisine combines products of Asturian, Peruvian and Japanese traditions to prepare dishes, such as ceviche with wakame seaweed, wagyu hamburger nigiri with rocoto and Asturian blue cheese or pepper marinated beef and goat’s cheese in breadcrumbs accompanied with shitake mushrooms.
Ronda 14 seats 100 diners in a surface area of 300 square metres divided on two floors and decorated in a simple and welcoming style. In addition to a bar area with high tables to dine casually, it has various dining rooms which are served by Conchi Álvarez.
Céspedes has another restaurant in Madrid called Cilindro where you can enjoy this unique culinary fusion in the Lista district.
