They use just four ingredients, the basics of bread: flour, water, salt and yeast. With these basics, they make the multiple varieties of bread offered at this shop, where you can also have breakfast, lunch or an afternoon snack. In the Chamberí district, Miga Bakery has a window where, in their own words: "we want to bring the customer closer to our philosophy of quality, so they feel our team is nearby and see the real process behind each type of bread we make every day". At Bakery, they work with starters that they make themselves, with long fermentation times, and rest the dough on linen cloths. They also have another very important tool for ensuring quality bread: a refractory oven. This gives the bread its flavour, texture and appearance: sensations reminiscent of traditional, old-fashioned bread.
In a space designed for enjoyment, reminiscent of a traditional bakers, but with a modern, industrial air, you can enjoy soup or a sandwich at its tables, or snack on coffee and cake.
