Traditional Spanish tapas are the star of this restaurant led by the chef Paco Roncero, part of the NH Collection Madrid Paseo del Prado. Here, the chef boasting two Michelin stars for his cuisine at La Terraza del Casino (now Paco Roncero Restaurante), pours all of his art into both traditional and avant garde tapas. The menu is completed with other starters and entrees for a quiet meal.

Everything that Estado Puro offers is a real surprise, from the moment the customer enters the premises and receives a smart little welcome pack with the menu, a serviette and cutlery. Estado Puro offers a menu in which traditional proposals prepared in a very personal way are the main feature, such as croquettes (ham, mushroom and oxtail) or Spanish omelette.
