Coque was set up in 2017 in the traditional Chamberí neighbourhood after more than 40 years in the town of Humanes. In Madrid, it continues to offer diners a unique culinary experience through chef, Mario Sandoval, using local and fermented products as well as its fetish ingredient: eggs, to which its latest culinary research is added, as a result of its collaboration with researchers from the CSIC. The Michelin Guide once again endorses these talented chefs, re-awarding them two stars in its 2023 edition, as well as a green star in the 2022 edition for their commitment to sustainability.
The restaurant owned by the Sandoval brothers covers an area of 1100 square metres spread over two floors and can seat up to 70 guests. The space is divided into a cocktail bar, spread across several different areas with large armchairs, where the gastronomic experience begins; a cellar with 3000 wines, where the proposal continues; the open kitchen, where Mario Sandoval welcomes diners; and finally, the main dining room itself, divided into two areas, one further inside and the other with large picture windows looking out over the street.
Coque serves a new tasting menu, Era, a nod to the areas of rural Spain left depopulated by mass emigration, known as Empty Spain. It also has vegetarian and vegan dishes.
Coque also boasts three Repsol Suns as well as the #AlimentosdEspaña Sustainable Sun award.
