Named after its owner, Goikezo Kabi, this restaurant also carries the name of the hotel where it is located, Hotel Wellington, as its surname. Under Jesus Santos' guidance, the restaurant is specialized in Basque cuisine, offering a comfortable and peaceful environment with a sophisticated and luxurious atmosphere.
Complemented by a wine list with over 300 worldwide references, the restaurant recommends the roasted suckling pig, their famous Guernica peppers, the turbot cooked at a low temperature with Santurce sauce, the beef carpaccio with Parmesan cheese shavings, and for dessert, the canutillos de Bilbao (crème pâtissière-stuffed pastries) with custard, the white chocolate flowing dessert or the green tea ice-cream.
