Welcome to Madrid
Pure fantasy. The only way to describe Dabiz Muñoz’s travelling cuisine. In 2013, this young chef brought back the honour of having a three Michelin-starred restaurant in Madrid, after 20 years without such an establishment in the city. DiverXO opened its doors in the district of Tetuán in 2007, before moving to a bigger place in the same neighbourhood, and is currently located in the NH Collection Madrid Eurobuilding on Calle del Padre Damián, in the area of Paseo de la Castellana.
Muñoz’s incredible dishes are hard to label. His two tasting menus are made of lienzos (canvases), and are indeed authentic works of art on your table. The waiters bring the food out in stages, served on a smooth, white ceramic plate, allowing the diner to feel as if they´re tasting an actual painting. The chef’s cuisine is ‘complete, honest, and without distractions. A kind of Cirque du Soleil performance,’ he explains.
The experience feels like a show set in a dining room, with intriguing decoration by interior designer Lázaro Rosa-Violán, who has even thought of flying pigs for the walls – a symbol of the creativity that reigns supreme at DiverXO.
