Going out for pinchos to one of the restaurants of this famous Biscayan chain is a real treat for the palate. Jose Luis is still committed to the dishes that made him famous, which grants his cuisine the label of 'renovated traditional'.

The house's suggestions range from fried green asparagus with seared Almadraba tuna cubes, truffled oil and smoked cured meat to confit cod cubes in Biscayan sauce and crispy vegetable sausage. For dessert, rice soup with coconut and toffee, or vanilla-infused mango and raspberry sorbet are equally delicious.

Not to forget its famous 'huevos rotos' (fried eggs with ham on a bed of potatoes) and Spanish tortilla, considered by many to be the best in Madrid. Its secret lies in the way the potatoes are sliced, very thin, so that they poach in the olive oil until they are very soft. They are then mixed with the egg, and the tortilla is slightly cooked on both sides so that it stays moist inside.
